If the era of the family bar where Denise feasted the entire village with her delicious cooking is over, the traditional quality cooking of the Bailiwick restaurant continues thanks to the talent of Jean-Michel Gouzon. For more than 35 years, Jean-Michel, chef proprietor, has been passionately developing generous and authentic cooking recognized by everyone. Since his election as a gourmet ambassador for the Cantal mountains and his first prize in the national final of the Logis de France regional cooking in 2001, he has continued to collect accolades and awards.
One of his secrets is to revisit in a very respectful way the gastronomy of the Cantal. In his menu, you will find the great classics of Auvergne cooking, such as truffles, home-made foie gras, filet of Salers beef, tripoux or Salers sausage without excluding some more current dishes such as this duo of Saint-Tropez. Roasted scallops and prawns, artichoke cream, carrot-citrus juice and sorbet or with the fillet of bar cooked on its skin, pea puree and Thai juice.
